Our HopBox features four “Hop Forward” beers we created to stimulate your senses. Countless varieties of hops are grown all over the world, and brewers have been adding hops to their malty creations for over 1000 years. These plump green flowers grow on vines and, when added to beer, balance the sweet character of the malt with bitterness and brilliant aromas that make beer simply beautiful. The endless combinations of hops make each beer unique and interesting. Beer drinkers have never been happier as hops have taken a “lead role” in many beer styles today. Here at the O’Fallon Brewery we will continue to innovate, using new varieties and creating hop infusing techniques to celebrate what is arguably my favorite ingredient in beer!

We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests “on top” of the hops for five extra days! Malty sweetness up front with big cascade and glacier hops in the finish — a wonderfully drinkable IPA!

Czech Yo’Self is a Bohemian Style Pils originating from what is now the Czech Republic. It’s a medium-bodied pale lager accentuated with Czech Saaz hops. This hop variety has a distinct spicy character that gently cuts through the slightly sweet malt profile leaving the beer with a clean yet distinct flavor that only Saaz can deliver.

Speed Bump is a sessionable Pale Ale, light on the palate with a soft, sweet hint of fruit from a dash of flaked maize and Kolsch yeast. We alter the style slightly by burst-hopping Speed Bump for a fresh orange citrus hop flavor and aroma in the finish while leaving the bitterness behind. Pour it straight down the middle of your favorite beer glass. It’s bright unmistakable color sets it apart from other beers. Taste it… crushable and quick, this hop-forward beer is meant to be an everyday favorite.

Big and bold, this American Double IPA delivers headbangin’ hop intensity in a beer anthem dedicated to one of our favorite hops, Chinook. It’s known for its big citrus character and spicy backbone, and we pack over two pounds into each barrel, dry-hopping for even more distinct flavor and aroma. Chinook Me All Night Long is turbid, cloudy by design, so give it a gentle roll before you unleash it in your glass…and let it rock you all night long!
